Description

Healthy and delicious protein bites packed with cottage cheese, lemon, and blueberries, perfect for on-the-go snacking.


Ingredients

  • 3/4 cup Blueberries, fresh or frozen
  • 1 large Lemon, Zest of (about 1 tbsp)
  • 1 large Egg
  • 1 cup Rolled oats
  • 1/4 cup Honey or maple syrup
  • 1/2 tsp Baking powder
  • 1 Pinch Salt
  • 1 tsp Vanilla extract
  • 1 cup Cottage cheese

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the cottage cheese, egg, honey (or maple syrup), and lemon zest. Mix until smooth.
  3. In another bowl, combine the rolled oats, baking powder, salt, and vanilla extract.
  4. Slowly add the dry ingredients to the wet ingredients and stir until just combined. Fold in the blueberries gently.
  5. Drop spoonfuls of the mixture onto the prepared baking sheet.
  6. Bake for 12-15 minutes or until the bites are golden and firm to the touch.
  7. Let cool before enjoying your protein bites.
