Description
Healthy and delicious protein bites packed with cottage cheese, lemon, and blueberries, perfect for on-the-go snacking.
Ingredients
- 3/4 cup Blueberries, fresh or frozen
- 1 large Lemon, Zest of (about 1 tbsp)
- 1 large Egg
- 1 cup Rolled oats
- 1/4 cup Honey or maple syrup
- 1/2 tsp Baking powder
- 1 Pinch Salt
- 1 tsp Vanilla extract
- 1 cup Cottage cheese
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the cottage cheese, egg, honey (or maple syrup), and lemon zest. Mix until smooth.
- In another bowl, combine the rolled oats, baking powder, salt, and vanilla extract.
- Slowly add the dry ingredients to the wet ingredients and stir until just combined. Fold in the blueberries gently.
- Drop spoonfuls of the mixture onto the prepared baking sheet.
- Bake for 12-15 minutes or until the bites are golden and firm to the touch.
- Let cool before enjoying your protein bites.

Store in an airtight container for up to 5 days in the refrigerator or freeze for up to 3 months.
