Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 3 carrots, diced
- 2 celery stalks, diced
- 1 zucchini, diced
- 1 cup mushrooms, sliced
- 6 cups vegetable broth
- 1 cup kale, chopped
- 1 cup spinach
- 1 teaspoon ginger, grated
- 1 teaspoon turmeric
- Salt and pepper to taste
- Fresh herbs (like parsley or cilantro) for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, and sauté until translucent.
- Add carrots and celery, cooking for about 5 minutes.
- Stir in zucchini and mushrooms, and cook until tender.
- Pour in the vegetable broth and bring to a simmer.
- Add kale, spinach, ginger, turmeric, salt, and pepper.
- Simmer for 10-15 minutes until vegetables are tender.
- Serve hot, garnished with fresh herbs.
