A creamy, low-carb version of the classic Marry Me Chicken Soup, perfect for a quick weeknight meal.


Ingredients

  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1.5 pounds boneless skinless chicken thighs
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 0.5 cup grated parmesan cheese
  • 0.33 cup sun-dried tomatoes, chopped
  • 1 teaspoon Italian seasoning
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup fresh basil, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add chicken thighs and sear on both sides.
  2. Pour in the chicken broth and add sun-dried tomatoes, Italian seasoning, salt, and pepper. Bring to a simmer.
  3. Cover and cook until the chicken is cooked through, about 15–20 minutes. Remove chicken and shred with two forks.
  4. Return shredded chicken to the pot. Stir in heavy cream and grated parmesan. Heat gently until the cheese melts and the soup is warm.
  5. Stir in fresh chopped basil just before serving.

Notes

Use fresh grated parmesan for better melt and flavor. Do not boil after adding cream to avoid curdling.
