Description
A creamy, low-carb version of the classic Marry Me Chicken Soup, perfect for a quick weeknight meal.
Ingredients
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1.5 pounds boneless skinless chicken thighs
- 4 cups chicken broth
- 1 cup heavy cream
- 0.5 cup grated parmesan cheese
- 0.33 cup sun-dried tomatoes, chopped
- 1 teaspoon Italian seasoning
- 0.25 teaspoon salt
- 0.25 teaspoon black pepper
- 0.25 cup fresh basil, chopped
Instructions
- Heat olive oil in a large pot over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add chicken thighs and sear on both sides.
- Pour in the chicken broth and add sun-dried tomatoes, Italian seasoning, salt, and pepper. Bring to a simmer.
- Cover and cook until the chicken is cooked through, about 15–20 minutes. Remove chicken and shred with two forks.
- Return shredded chicken to the pot. Stir in heavy cream and grated parmesan. Heat gently until the cheese melts and the soup is warm.
- Stir in fresh chopped basil just before serving.
Notes
Use fresh grated parmesan for better melt and flavor. Do not boil after adding cream to avoid curdling.
