Melted Mozzarella & Ranch Chicken Bombs

Description

Quick and cheesy chicken bites filled with gooey mozzarella, perfect for snacks or meals.


Ingredients

  • 1 lb Ground chicken
  • 1 tsp Garlic powder
  • 2 tbsp Parsley, fresh or dried
  • 1 Egg, large
  • 1 packet Ranch seasoning mix
  • Olive oil or cooking spray
  • 1/2 cup Breadcrumbs
  • 1 cup Mozzarella cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine ground chicken, garlic powder, parsley, egg, and ranch seasoning mix; mix until well combined.
  3. Take a portion of the mixture, flatten it in your palm, place a cube of mozzarella cheese in the center, and fold the chicken around it to form a ball.
  4. Repeat with the remaining mixture and cheese.
  5. Roll each ball in breadcrumbs until fully coated.
  6. Place the bombs on a baking sheet lined with parchment paper and spray lightly with olive oil or cooking spray.
  7. Bake for 20-25 minutes or until golden brown and cooked through.
  8. Serve hot and enjoy!

Notes

Use cold mozzarella to prevent it from melting out while shaping. For added flavor, consider using pepper jack cheese or adding cooked bacon.
