Ingredients
- 4 boneless skinless chicken breasts
- 2 cloves garlic
- 1 cup mushrooms
- 1/2 cup sun-dried tomatoes
- 1 cup chicken broth
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
Instructions
- Heat the olive oil in a skillet over medium heat.
- Season the chicken breasts with salt and pepper, then add to the skillet. Cook until browned on both sides and cooked through, about 10-12 minutes per side.
- Remove the chicken and set aside.
- In the same skillet, add garlic and sauté for 1 minute until fragrant.
- Add mushrooms and sun-dried tomatoes, cooking for another 3-4 minutes.
- Pour in chicken broth and bring to a simmer.
- Stir in heavy cream and bring to a gentle simmer.
- Add grated Parmesan cheese and stir until melted and smooth.
- Return the chicken to the skillet, coating it with the sauce.
