Description

A rich dessert that combines layers of coffee-soaked cake, creamy whipped cream, and a hint of whiskey for a delightful treat.


Ingredients

  • 4 large eggs
  • 2 eggs
  • 3 tbsp cake flour
  • 1/4 tsp ground cinnamon
  • 3 tbsp cocoa powder
  • 1 1/2 oz cornstarch
  • 3 1/2 oz powdered sugar
  • 6 oz sugar
  • 3 tbsp sugar
  • 2 tsp vanilla essence
  • 9 fl oz strong coffee
  • 6 fl oz coffee
  • 2 oz butter
  • 8 fl oz heavy cream
  • 8 fl oz whole milk
  • 2 1/2 tbsp whiskey
  • 2 1/2 oz whiskey

Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour a baking dish.
  2. Whisk together the eggs and sugar until pale and fluffy.
  3. Sift in the cake flour, cocoa powder, ground cinnamon, and cornstarch, then gently fold until combined.
  4. Pour the batter into the prepared dish and bake for about 25-30 minutes, or until a toothpick comes out clean. Let cool.
  5. Whip the heavy cream until stiff peaks form, then add in the vanilla essence and remaining sugar to taste.
  6. Brew strong coffee and let it cool, then mix in the whiskey.
  7. Once the cake is cool, tear it into chunks and layer in a trifle dish with the coffee, whipped cream, and chocolate shavings.
  8. Repeat the layers until all ingredients are used, ending with whipped cream on top.
  9. Chill in the refrigerator for at least 1 hour before serving.
  10. Serve in clear glass bowls or a trifle dish, garnished with chocolate shavings.

Notes

Use fresh eggs for best results and consider making ahead for improved flavor. A delicate balance of whiskey enhances the dessert without overpowering the coffee.
