No-Bake Chocolate Coconut Oatmeal Treats

Description

Quick and simple no-bake treats made with oats, coconut, and chocolate, perfect for snacks or desserts.


Ingredients

  • 1 cup rolled oats
  • 1 cup unsweetened shredded coconut
  • 1/2 cup dark or semi-sweet chocolate chips
  • 1/2 cup nut butter (peanut or almond)
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. In a mixing bowl, combine the rolled oats, shredded coconut, and chocolate chips. Stir well.
  2. In a small saucepan over low heat, combine nut butter, honey (or maple syrup), vanilla extract, and salt until smooth.
  3. Pour the nut butter mixture over the dry ingredients and mix until well combined.
  4. Press the mixture into a lined baking dish evenly.
  5. Chill in the fridge for at least 30 minutes to set.
  6. Once set, cut into bars or squares and enjoy.

Notes

Store in an airtight container in the fridge for up to 1 week. For longer storage, freeze the bars for up to 2 months and thaw in the fridge before serving.
