Rich chocolate brownies with a creamy peanut butter cheesecake layer, perfect for parties or quiet nights at home.
Ingredients
- 1 cup (226g) unsalted butter, melted
- 1 cup (128g) all-purpose flour
- 1 cup (90g) unsweetened cocoa powder
- 1 cup (200g) granulated sugar
- 1/2 cup (100g) brown sugar, packed
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup (250g) creamy peanut butter
- 8 ounces (227g) cream cheese, softened
- 1 cup (120g) powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large mixing bowl, combine the melted butter, granulated sugar, and brown sugar until smooth.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour and cocoa powder, then fold this into the butter mixture until well combined.
- Pour half of the brownie batter into the prepared pan, spreading it evenly.
- In another bowl, blend the creamy peanut butter, softened cream cheese, and powdered sugar until smooth.
- Spread the peanut butter mixture over the brownie layer.
- Spoon the remaining brownie batter over the peanut butter layer, gently swirling with a knife.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Allow to cool before cutting into squares.
Notes
For best results, use room temperature eggs and cream cheese. Don’t overmix the batter; fold gently to maintain fudginess.
