Description

These fun and fruity cookies feature a caramelized pineapple top and cookie dough, reminiscent of classic upside-down cake.


Ingredients

  • 1 can Pineapple rings, canned
  • 1 large Egg
  • 2 cups All purpose flour
  • 1 tsp Baking soda
  • 1 cup Granulated sugar
  • 1/2 tsp Salt
  • 2 tbsp Sugar
  • 1 tsp Vanilla extract
  • 1 cup Butter, unsalted

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing well.
  4. Whisk together the flour, baking soda, and salt in a separate bowl.
  5. Gradually add the dry ingredients to the wet mixture, mixing until combined.
  6. Drain the pineapple rings and pat dry with a paper towel.
  7. Melt the 2 tablespoons of sugar in a small pan until it caramelizes slightly.
  8. Place the caramelized sugar at the bottom of your cookie cups or baking dish.
  9. Arrange pineapple rings over the melted sugar.
  10. Drop spoonfuls of the cookie dough over the pineapple.
  11. Bake for 12-15 minutes or until golden brown.
  12. Allow to cool slightly before inverting the cookies onto a serving plate.

Notes

Pat the pineapple rings dry to avoid excess liquid. For a lighter cookie, chill the dough before baking.
