Description
These fun and fruity cookies feature a caramelized pineapple top and cookie dough, reminiscent of classic upside-down cake.
Ingredients
- 1 can Pineapple rings, canned
- 1 large Egg
- 2 cups All purpose flour
- 1 tsp Baking soda
- 1 cup Granulated sugar
- 1/2 tsp Salt
- 2 tbsp Sugar
- 1 tsp Vanilla extract
- 1 cup Butter, unsalted
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract, mixing well.
- Whisk together the flour, baking soda, and salt in a separate bowl.
- Gradually add the dry ingredients to the wet mixture, mixing until combined.
- Drain the pineapple rings and pat dry with a paper towel.
- Melt the 2 tablespoons of sugar in a small pan until it caramelizes slightly.
- Place the caramelized sugar at the bottom of your cookie cups or baking dish.
- Arrange pineapple rings over the melted sugar.
- Drop spoonfuls of the cookie dough over the pineapple.
- Bake for 12-15 minutes or until golden brown.
- Allow to cool slightly before inverting the cookies onto a serving plate.
Notes
Pat the pineapple rings dry to avoid excess liquid. For a lighter cookie, chill the dough before baking.
