Description

Bright and fun cookies that bring the classic pineapple upside down cake flavor into a delicious treat.


Ingredients

  • 6 Pineapple rings, canned
  • 1 Egg
  • 1 1/2 cups All-purpose flour
  • 1 1/2 tsp Baking powder
  • 1/2 cup Brown sugar
  • 3/4 cup Granulated sugar
  • 1/4 tsp Salt
  • 1/2 cup Butter, unsalted
  • 12 Maraschino cherries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together the unsalted butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Grease a baking pan and place the pineapple rings in the bottom.
  7. Put a maraschino cherry in the center of each pineapple ring.
  8. Drop spoonfuls of the cookie dough over the pineapple rings.
  9. Bake for 12-15 minutes or until the edges are golden.
  10. Allow to cool for a few minutes before inverting onto a serving platter.
  11. Serve warm or at room temperature.

Notes

Cool the cookies fully before storing. Store in an airtight container for up to 2 days at room temperature, or in the fridge for up to 5 days. Freeze baked cookies in a sealed freezer bag for up to 1 month.
