Description

Deliciously moist pistachio bread that combines the unique flavor of pistachios with a soft, tender crumb.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup pistachio pudding mix
  • 3/4 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 1/2 cup chopped pistachios
  • Green food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, cream together the softened butter and pistachio pudding mix until well blended. Add the eggs, one at a time, mixing well after each addition.
  4. Stir in the milk, vanilla extract, and almond extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chopped pistachios and food coloring if desired.
  7. Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Enhance flavor by roasting pistachios before adding to batter. Allow bread to cool completely before slicing to maintain shape.
