Ingredients
- 2 large roasted red peppers
- 2 cloves garlic
- 1/4 cup olive oil
- 2 tablespoons lemon juice or vinegar
- 1/4 cup fresh herbs (basil, oregano, or parsley)
- Salt and pepper to taste
Instructions
- Roast the peppers using your preferred method until charred and blistered.
- Peel and seed the roasted peppers.
- In a blender or food processor, combine the roasted peppers, garlic, olive oil, lemon juice, and herbs. Blend until smooth.
- Taste and adjust seasoning with salt, pepper, or more lemon juice as needed.
- Serve immediately or store in the fridge for up to a week.
Notes
For a creamier sauce, add 1/4 cup of heavy cream or a plant-based milk for a vegan option. Spice it up with red pepper flakes for added heat.
