Ingredients
- 2 large Sweet potatoes
- 2 tbsp Olive oil
- 1/4 tsp Salt
- 1/4 tsp Black pepper, ground
- 1/4 tsp Cinnamon, ground
- 2 tbsp Honey
- 1/3 cup Feta cheese
- 1 tbsp fresh Parsley
Instructions
- Preheat the oven to 425°F (220°C).
- Peel and slice sweet potatoes into rounds, about 1/4 to 1/2 inch thick.
- Toss sweet potato rounds with olive oil, salt, black pepper, and cinnamon until evenly coated.
- Spread sweet potatoes on a baking sheet in a single layer.
- Roast in the oven for about 25 minutes, flipping halfway through, until golden and tender.
- Remove from oven and drizzle with honey, then sprinkle with feta cheese and fresh parsley.
- Serve warm as a side dish.
Notes
For a dairy-free option, use vegan feta. Ensure sweet potato rounds are of uniform thickness for even cooking.
