Description
A tender beef dish with soft potatoes and a rich garlic butter sauce, cooked low and slow in a slow cooker.
Ingredients
- 2 1/2 lbs Beef chuck roast
- 2 lbs Baby Yukon Gold potatoes
- 1 cup Carrots
- 5 cloves Garlic
- 1 tsp Italian herbs, dried
- 1 medium Onion
- 1/4 cup fresh Parsley
- 1/2 cup low sodium Beef broth
- 1/2 tsp Red pepper flakes
- Salt and black pepper to taste
- 2 tbsp Olive oil
- 6 tbsp unsalted Butter
Instructions
- Season the beef chuck roast with salt and black pepper.
- In a skillet, heat olive oil over medium heat and sear the beef on all sides until browned.
- Transfer the beef to a slow cooker.
- Add the chopped Yukon Gold potatoes, diced carrots, minced garlic, chopped onion, and red pepper flakes to the slow cooker.
- Pour the beef broth over the ingredients.
- Cut the butter into slices and place evenly over the top.
- Sprinkle Italian herbs and fresh parsley on top.
- Cover and cook on low for 7-8 hours or until the beef and potatoes are tender.
- Stir before serving and adjust seasoning as necessary.
Notes
Trim some fat from the roast for less grease. Brown the beef well for more flavor. Cut potatoes into similar sizes for even cooking. If the sauce is thin, thicken it with cornstarch.
