Ingredients

  • 1 cup dried black-eyed peas
  • 4 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup diced tomatoes (canned or fresh)
  • Optional: hot sauce for serving

Instructions

  1. Rinse the black-eyed peas under cold water. Remove any debris or damaged peas.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion, bell pepper, and garlic. Sauté for about 5 minutes until the vegetables are soft.
  3. Add the rinsed black-eyed peas to the pot along with the water, thyme, smoked paprika, and the bay leaf.
  4. Bring everything to a boil, then reduce the heat to low. Cover and simmer for about 45 minutes to 1 hour, or until the peas are tender.
  5. In the last 10 minutes of cooking, add the diced tomatoes and season with salt and pepper. Stir well.
  6. Remove the bay leaf before serving.

Notes

Soaking the black-eyed peas overnight can reduce cooking time and help them cook evenly. Feel free to add your favorite spices or meats, like ham hocks or bacon, for extra flavor.
