Ingredients
- 1 cup cooked chicken breast
- 3 cloves garlic
- 14 oz mushrooms
- 1/2 onion
- 1 tsp red chili pepper flakes
- 10 oz fresh spinach
- 1/2 cup low sodium vegetable broth
- 1 cup quinoa
- 1 tsp Italian seasoning
- Fresh cracked pepper
- 3 tbsp olive oil
- 1/2 cup grated Parmesan cheese
- 2 cups water
Instructions
- Heat olive oil in a skillet over medium heat.
- Add chopped onion and minced garlic, sautéing until translucent.
- Stir in mushrooms and cook until tender.
- Add quinoa, water, and vegetable broth; bring to a boil.
- Reduce heat, cover, and simmer for about 15 minutes until quinoa is cooked.
- Add spinach, chicken, Italian seasoning, and red chili pepper flakes.
- Stir until spinach wilts and everything is heated through.
- Season with pepper and top with grated Parmesan cheese before serving.
Notes
For added flavor, consider using chicken broth instead of vegetable broth. You can also add vegetables like bell peppers or zucchini.
