Description
A cozy fall dinner that’s sweet, tangy, and easy to make, featuring chicken roasted in a sticky apple cider sauce paired with a fresh autumn slaw.
Ingredients
- 6 Chicken thighs, bone-in and skin-on
- 1 medium Apple, diced
- 1 cup Carrots, shredded
- 2 cloves Garlic, minced
- 2 cups Green cabbage, shredded
- 2 tbsp fresh Parsley or chives, chopped
- 1 tbsp Dijon mustard
- 2 tbsp Honey
- 1/4 tsp Celery seeds
- Salt and pepper to taste
- 2 tbsp Apple cider vinegar
- 1 tbsp Cooking oil
- 1 cup Apple cider
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine apple cider, honey, Dijon mustard, garlic, celery seeds, salt, and pepper.
- Place chicken thighs in the bowl and coat them well with the marinade.
- Heat cooking oil in a large oven-safe skillet over medium-high heat.
- Sear the chicken thighs skin-side down until golden brown, about 5-7 minutes.
- Flip the chicken and pour the apple cider mixture over it.
- Transfer the skillet to the oven and roast for 20-25 minutes or until the chicken is cooked through.
- While the chicken roasts, prepare the slaw by mixing shredded cabbage, carrots, diced apple, parsley or chives, and apple cider vinegar in a bowl.
- Serve the chicken with the slaw on the side. Enjoy your autumn-inspired meal!
Notes
Pat the chicken skin dry for a better sear. Use a tart apple for the slaw to balance flavors. Can add spices like cinnamon for warmth.
