Description
A simple, moist coffee cake made with Granny Smith apples and topped with a crisp finish.
Ingredients
- 2 medium Granny Smith apples
- 3 Eggs
- 1 1/2 tsp Baking powder
- 1/2 tsp Baking soda
- 1 1/3 cup Brown sugar, lightly packed
- 1 tsp Cinnamon
- 2 3/4 cups Flour
- 1 1/2 cups Granulated sugar
- 3/4 tsp Salt
- 2 tsp Vanilla extract
- 1 cup Pecans
- 2 tbsp Apple cider
- 1 1/8 cup Butter, unsalted
- 1 cup Sour cream
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking pan.
- Peel and slice the apples, then toss them with apple cider and set aside.
- Mix together flour, baking powder, baking soda, salt, cinnamon, and brown sugar in a bowl.
- Cream the butter and granulated sugar until light and fluffy, then add eggs and vanilla extract.
- Add the dry ingredients to the wet mixture, alternating with sour cream, and mix until just combined.
- Fold in the sliced apples and pecans.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick comes out clean.
- Allow to cool in the pan before serving warm.
Notes
For added crunch, consider adding a streusel topping or using different nuts. Warm slices before serving for the best taste.
