Description

A simple, moist coffee cake made with Granny Smith apples and topped with a crisp finish.


Ingredients

  • 2 medium Granny Smith apples
  • 3 Eggs
  • 1 1/2 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1 1/3 cup Brown sugar, lightly packed
  • 1 tsp Cinnamon
  • 2 3/4 cups Flour
  • 1 1/2 cups Granulated sugar
  • 3/4 tsp Salt
  • 2 tsp Vanilla extract
  • 1 cup Pecans
  • 2 tbsp Apple cider
  • 1 1/8 cup Butter, unsalted
  • 1 cup Sour cream

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking pan.
  2. Peel and slice the apples, then toss them with apple cider and set aside.
  3. Mix together flour, baking powder, baking soda, salt, cinnamon, and brown sugar in a bowl.
  4. Cream the butter and granulated sugar until light and fluffy, then add eggs and vanilla extract.
  5. Add the dry ingredients to the wet mixture, alternating with sour cream, and mix until just combined.
  6. Fold in the sliced apples and pecans.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 50-60 minutes, or until a toothpick comes out clean.
  9. Allow to cool in the pan before serving warm.

Notes

For added crunch, consider adding a streusel topping or using different nuts. Warm slices before serving for the best taste.
