A delightful dish that balances zesty oranges and tender chicken with a mouthwatering marinade.


Ingredients

  • 4 Chicken thighs, bone-in skin-on
  • 3 Garlic cloves
  • 2 large Navel oranges
  • 1 tbsp fresh Thyme
  • Fresh sprigs of Thyme
  • 2 tbsp Honey
  • 2 tbsp Soy sauce
  • 1 tsp Paprika
  • Salt and pepper to taste
  • 1 tbsp Olive oil
  • 1/2 cup fresh Orange juice

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, honey, soy sauce, orange juice, minced garlic, paprika, thyme, and season with salt and pepper.
  3. Place chicken thighs in a baking dish and pour the marinade over them, ensuring they are well coated.
  4. Cut the navel oranges into wedges and place them around the chicken in the baking dish.
  5. Roast in the preheated oven for about 35-40 minutes or until the chicken is cooked through and golden.
  6. Baste the chicken halfway through the cooking time with the juices in the pan.
  7. Serve hot, garnished with fresh thyme sprigs and orange wedges.

Notes

For the best flavor, marinate the chicken for at least an hour, or overnight if possible. Adjust honey and soy sauce to taste. Use a meat thermometer to ensure chicken is cooked to 165°F (75°C).
