Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 1 can black beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes
- 1 can tomato sauce
- 1 packet taco seasoning
- 2 cups beef broth
- Salt and pepper to taste
- Shredded cheese, sour cream, and green onions for topping
Instructions
- Brown the ground beef and onion.
- Drain excess fat if necessary.
- Stir in the black beans, kidney beans, corn, diced tomatoes, tomato sauce, taco seasoning, and beef broth.
- Bring to a boil, then reduce heat and let simmer for 30 minutes.
- Season with salt and pepper to taste.
- Serve hot, topped with shredded cheese, sour cream, and green onions.
Notes
For a vegetarian version, replace ground beef with crumbled firm tofu or mushrooms and use vegetable broth.
