Ingredients

  • 1 pound Italian sausage
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable or chicken broth
  • 2 cans (15 ounces each) white beans, drained and rinsed
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add Italian sausage and cook until browned.
  3. Stir in onion, carrots, and celery; cook until vegetables are tender.
  4. Add garlic and cook for another minute.
  5. Pour in the broth and bring to a boil.
  6. Add the white beans, oregano, thyme, salt, and pepper.
  7. Reduce heat and let simmer for 20-30 minutes.
  8. Add fresh spinach just before serving and stir until wilted.

Notes

For a heartier version, use ground turkey or chicken instead of Italian sausage. Leftovers can be refrigerated for up to 4 days or frozen for 3 months.
