Ingredients
- 1 pound Italian sausage
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups vegetable or chicken broth
- 2 cans (15 ounces each) white beans, drained and rinsed
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 2 cups fresh spinach
- Salt and pepper to taste
- Olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add Italian sausage and cook until browned.
- Stir in onion, carrots, and celery; cook until vegetables are tender.
- Add garlic and cook for another minute.
- Pour in the broth and bring to a boil.
- Add the white beans, oregano, thyme, salt, and pepper.
- Reduce heat and let simmer for 20-30 minutes.
- Add fresh spinach just before serving and stir until wilted.
Notes
For a heartier version, use ground turkey or chicken instead of Italian sausage. Leftovers can be refrigerated for up to 4 days or frozen for 3 months.
