  • 2 cups chopped seasonal vegetables (e.g., kale, spinach, potatoes)
  • 1 can (15 oz) diced tomatoes
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat the oil.
  2. Sauté onion, carrots, and celery.
  3. Stir in garlic and cook for another minute.
  4. Pour in broth and add seasonal vegetables, diced tomatoes, thyme, salt, and pepper.
  5. Bring to a boil, then reduce to a simmer.
  6. Cook for 20–30 minutes or until vegetables are tender.
  7. Serve warm.

Notes
