Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 4 cups vegetable or chicken broth
- 2 cups chopped seasonal vegetables (e.g., kale, spinach, potatoes)
- 1 can (15 oz) diced tomatoes
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Heat the oil.
- Sauté onion, carrots, and celery.
- Stir in garlic and cook for another minute.
- Pour in broth and add seasonal vegetables, diced tomatoes, thyme, salt, and pepper.
- Bring to a boil, then reduce to a simmer.
- Cook for 20–30 minutes or until vegetables are tender.
- Serve warm.
Notes
Use medium heat to avoid browning too fast. Adjust salt near the end.
