Description

Delicious apple turnovers with a flaky puff pastry filled with spiced apple filling.


Ingredients

  • 340 grams high-gluten flour
  • 230 grams cold unsalted butter, diced
  • 170 grams cold water
  • 12 grams salt
  • 50 grams melted unsalted butter
  • 400 grams Gala or Granny Smith apples, peeled and diced
  • 80 grams granulated sugar
  • 80 grams honey
  • 40 grams unsalted butter
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Mix the flour, salt, cold water, and melted butter in a mixer until just combined.
  2. Incorporate the cold, diced butter, ensuring that it remains visible in the dough to create flakiness.
  3. Shape the dough into a rectangle, wrap it in plastic, and refrigerate for at least 2 hours.
  4. Roll out the chilled dough into a long rectangle.
  5. Perform a “book fold” by folding each end toward the center and then folding the dough in half.
  6. Rotate the dough, roll it out again, and repeat the folding process.
  7. Rest the dough in the fridge for another hour before using.
  8. Melt the butter in a saucepan over medium heat.
  9. Add the diced apples, sugar, honey, vanilla extract, cinnamon, and nutmeg.
  10. Cook until the apples soften but still hold their shape, about 10-15 minutes.
  11. Let the filling cool before using it in the turnovers.
  12. Roll out the puff pastry into a large square and cut it into smaller squares (about 4×4 inches).
  13. Spoon a generous amount of apple filling into the center of each square.
  14. Brush the edges of each square with a beaten egg, fold the pastry over to create a triangle, and seal the edges by crimping with a fork.
  15. Make a small slit on top of each turnover for steam to escape.
  16. Preheat the oven to 400°F (200°C).
  17. Place the turnovers on a baking sheet lined with parchment paper.
  18. Brush the tops with egg wash and sprinkle with coarse sugar.
  19. Bake for 20-25 minutes, or until golden brown and flaky.

Notes

For more sweetness and crunch, sprinkle coarse sugar on top before baking.
