Ingredients

  • 2 ripe bananas (mashed)
  • 2 1/2 cups whole wheat flour or oat flour (plus more for dusting)
  • 1/4 cup warm almond milk (or any milk)
  • 2 tbsp maple syrup or coconut sugar
  • 1/4 cup melted coconut oil or butter
  • 1 tbsp instant yeast
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 2 tbsp coconut oil or softened butter (for filling)
  • 1/3 cup coconut sugar (for filling)
  • 2 tsp ground cinnamon (for filling)
  • 1/2 cup Greek yogurt or dairy-free yogurt (for optional frosting)
  • 1 tbsp maple syrup (for optional frosting)
  • 1/2 tsp vanilla extract (for optional frosting)
  • Optional add-ons: chopped walnuts or pecans, mini dark chocolate chips

Instructions

  1. Prepare the Dough: Warm the almond milk to ~110°F, mix with maple syrup and sprinkle yeast on top. Let it sit for 5–10 minutes until frothy. In a large bowl, combine mashed bananas, melted coconut oil, vanilla, and salt. Add in the yeast mixture. Gradually add the flour, mixing with a spatula until a soft dough forms. Knead dough on a floured surface for 5–7 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for 1 hour.
  2. Make the Filling: Mix softened coconut oil, cinnamon, and coconut sugar to form a spreadable paste.
  3. Assemble the Rolls: Roll out dough into a rectangle (~12×9 inches), spread cinnamon mixture evenly over the surface, roll tightly from the long edge, and slice into 9–12 rolls.
  4. Final Rise: Place rolls in a greased baking dish, cover, and let rise again for 30 minutes.
  5. Bake: Preheat oven to 350°F (175°C) and bake for 20–25 minutes until golden.
  6. Frost & Serve: Mix frosting ingredients and spread on warm rolls.

Notes

For best results, use very ripe bananas for flavor and binding. Let the rolls cool slightly before frosting to prevent melting.
