Creamy White Lasagna Soup

Description

A warm and filling bowl of creamy white lasagna soup that tastes just like traditional lasagna.


Ingredients

  • 1 pound ground chicken or turkey (or sausage)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 4 cups chicken broth
  • 2 cups milk or half-and-half
  • 8 ounces lasagna noodles, broken into 2-inch pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella
  • 1/2 cup grated Parmesan
  • 2 cups fresh spinach, roughly chopped
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • Optional: red pepper flakes for heat, fresh basil for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the ground meat and cook until no pink remains. Drain excess fat if needed.
  2. Add chopped onion and cook for 3–4 minutes until soft. Stir in garlic and cook for 30 seconds more.
  3. Push meat to the side. Add butter to the empty space and melt. Sprinkle flour into the butter and stir to make a light roux. Cook for 1 minute.
  4. Slowly pour in chicken broth while stirring. Then add milk and stir until smooth.
  5. Add Italian seasoning, salt, and pepper. Bring the soup to a gentle boil.
  6. Add broken lasagna noodles. Reduce heat and simmer for 8–12 minutes, or until noodles are tender.
  7. Stir in ricotta, mozzarella, and half of the Parmesan. Mix until cheese melts and the soup is creamy.
  8. Add chopped spinach and cook for 1–2 minutes until wilted. Taste and adjust salt and pepper.
  9. Serve hot with extra Parmesan and fresh basil if desired.

Notes

For a thicker soup, use less broth or add more cheese. You can freeze the soup without the fresh spinach and ricotta for up to 2 months.
