Description
A warm and filling bowl of creamy white lasagna soup that tastes just like traditional lasagna.
Ingredients
- 1 pound ground chicken or turkey (or sausage)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 4 cups chicken broth
- 2 cups milk or half-and-half
- 8 ounces lasagna noodles, broken into 2-inch pieces
- 1 cup ricotta cheese
- 1 cup shredded mozzarella
- 1/2 cup grated Parmesan
- 2 cups fresh spinach, roughly chopped
- 1 teaspoon Italian seasoning
- Salt and black pepper to taste
- 1 tablespoon olive oil
- Optional: red pepper flakes for heat, fresh basil for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the ground meat and cook until no pink remains. Drain excess fat if needed.
- Add chopped onion and cook for 3–4 minutes until soft. Stir in garlic and cook for 30 seconds more.
- Push meat to the side. Add butter to the empty space and melt. Sprinkle flour into the butter and stir to make a light roux. Cook for 1 minute.
- Slowly pour in chicken broth while stirring. Then add milk and stir until smooth.
- Add Italian seasoning, salt, and pepper. Bring the soup to a gentle boil.
- Add broken lasagna noodles. Reduce heat and simmer for 8–12 minutes, or until noodles are tender.
- Stir in ricotta, mozzarella, and half of the Parmesan. Mix until cheese melts and the soup is creamy.
- Add chopped spinach and cook for 1–2 minutes until wilted. Taste and adjust salt and pepper.
- Serve hot with extra Parmesan and fresh basil if desired.
Notes
For a thicker soup, use less broth or add more cheese. You can freeze the soup without the fresh spinach and ricotta for up to 2 months.
