Description

A hearty and nutritious vegetable beef soup made easy in a crockpot.


Ingredients

  • 1.5 to 2 pounds beef stew meat
  • 2 large potatoes, diced
  • 3 large carrots, sliced
  • 2 stalks celery, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 cup green beans (fresh or frozen)
  • 1 cup corn (frozen or canned)
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • Salt, to taste
  • Pepper, to taste
  • Dried thyme, to taste
  • Bay leaves, to taste
  • Red pepper flakes, to taste
  • Optional: 1 medium zucchini, diced
  • Optional: 1 cup cabbage, shredded
  • Optional: 1/2 cup frozen peas
  • Optional: Barley or pasta

Instructions

  1. Prepare the ingredients by dicing the beef and chopping all vegetables.
  2. Optionally brown the beef in a skillet for added flavor.
  3. Add the beef to the crockpot, then layer on the vegetables and canned items.
  4. Pour in the beef broth, diced tomatoes, and tomato paste, and stir to combine.
  5. Season the mixture with salt, pepper, thyme, bay leaves, and red pepper flakes.
  6. Cover and cook on low for 7-8 hours or high for 4-5 hours.
  7. Taste and adjust the seasoning as needed 30 minutes before serving.
  8. Serve hot, ladled into bowls.

Notes

For a thicker soup, mash some of the potatoes or add a cornstarch slurry during the last hour of cooking.
