Description
A hearty and nutritious vegetable beef soup made easy in a crockpot.
Ingredients
- 1.5 to 2 pounds beef stew meat
- 2 large potatoes, diced
- 3 large carrots, sliced
- 2 stalks celery, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 1 cup green beans (fresh or frozen)
- 1 cup corn (frozen or canned)
- 4 cups beef broth
- 2 tablespoons tomato paste
- Salt, to taste
- Pepper, to taste
- Dried thyme, to taste
- Bay leaves, to taste
- Red pepper flakes, to taste
- Optional: 1 medium zucchini, diced
- Optional: 1 cup cabbage, shredded
- Optional: 1/2 cup frozen peas
- Optional: Barley or pasta
Instructions
- Prepare the ingredients by dicing the beef and chopping all vegetables.
- Optionally brown the beef in a skillet for added flavor.
- Add the beef to the crockpot, then layer on the vegetables and canned items.
- Pour in the beef broth, diced tomatoes, and tomato paste, and stir to combine.
- Season the mixture with salt, pepper, thyme, bay leaves, and red pepper flakes.
- Cover and cook on low for 7-8 hours or high for 4-5 hours.
- Taste and adjust the seasoning as needed 30 minutes before serving.
- Serve hot, ladled into bowls.
Notes
For a thicker soup, mash some of the potatoes or add a cornstarch slurry during the last hour of cooking.
