A delightful and beautiful pink velvet cake perfect for celebrating Mother’s Day.
Ingredients
- 4 large Eggs
- 1 tbsp Baking powder
- 2 1/2 cups Cake flour
- 1/2 cup unsweetened Cocoa powder
- 1 Cream cheese frosting
- 1 Red Food coloring
- 1 3/4 cups Granulated sugar
- 1/2 tsp Salt
- 2 tsp pure Vanilla extract
- 3/4 cup unsalted Butter
- 1 cup Buttermilk
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add in the eggs, one at a time, beating well after each addition.
- Stir in the vanilla extract and red food coloring.
- In another bowl, mix together the flour, cocoa powder, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with buttermilk, starting and ending with the dry ingredients. Mix until just combined.
- Divide the batter evenly between the prepared cake pans.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then remove them from the pans and transfer to wire racks to cool completely.
- Frost the cooled cakes with cream cheese frosting.
Notes
Ensure butter is at room temperature for easy mixing. For brighter pink color, add more red food coloring.
