Ingredients
- 1 box red velvet cake mix
- 1/2 cup vegetable oil
- 2 large eggs
- 1/2 cup all-purpose flour
- 1/4 cup cocoa powder
- 1/2 cup white chocolate chips (optional)
- 1/4 cup powdered sugar (for rolling)
- 1 teaspoon vanilla extract
- 1/4 cup butter (optional, for added richness)
Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large mixing bowl, combine the red velvet cake mix, vegetable oil, and eggs. Stir in the all-purpose flour and cocoa powder until a soft dough forms.
- Fold in white chocolate chips if using.
- Use a cookie scoop to portion out dough, roll into balls, and coat in powdered sugar.
- Place on baking sheets, spacing 2 inches apart. Bake for 10-12 minutes until the edges are set and tops are cracked.
- Allow cookies to cool on the baking sheet for a few minutes before moving to a wire rack to cool completely.
