Description

Deliciously soft Red Velvet Whoopie Pies filled with sweet buttercream, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 8 tbsp unsalted butter, room temperature
  • 2 tsp vanilla extract
  • 1 cup granulated sugar
  • 1 large egg
  • 1 cup buttermilk
  • 1 tbsp cocoa powder
  • 1 tsp baking soda
  • 1 tsp white vinegar
  • Red food coloring

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In one bowl, whisk together the flour, cocoa powder, baking soda, and a pinch of salt. Set aside.
  3. In another bowl, cream the butter and sugar together until light and fluffy.
  4. Beat in the egg, vanilla extract, and a generous splash of red food coloring until everything is beautifully combined.
  5. Gradually alternate adding the dry flour mixture and the buttermilk to the butter mixture, mixing until just combined.
  6. Use a tablespoon to drop dollops of the batter onto the lined baking sheet, spacing them a couple of inches apart.
  7. Bake them for about 10-12 minutes or until they spring back when lightly touched.
  8. Let them cool completely on a wire rack.
  9. For the filling, beat together some butter, powdered sugar, and a little vanilla extract until smooth and creamy.
  10. Sandwich the filling between two of your red velvet cookies and enjoy.

Notes

Let the whoopie pies cool completely before filling to avoid melting the filling. For a creamier filling, add a little cream cheese to the buttercream.
