Ingredients
- 1 cup unsalted butter
- 1 cup granulated sugar
- 1 cup lemon curd
- 2 large eggs
- 2 ½ cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- Sugar for brûlée topping
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the butter and sugar until light and fluffy.
- Beat in the lemon curd and eggs until well combined.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop spoonfuls of the dough onto a prepared baking sheet.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Let the cookies cool.
- Once cooled, sprinkle sugar on top of each cookie and use a kitchen torch to caramelize the sugar for a crème brûlée effect.
- Allow the sugar to cool before serving.
Notes
For best results, let cookies cool fully before adding sugar for brûlée. Work in small batches when torching to keep sugar from burning.
