Ingredients
  

For the crust
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup oats
  • 1/2 cup unsalted butter, melted Use unsalted butter for better control over taste.
For the cheesecake filling
  • 8 oz cream cheese, softened Ensure it's at room temperature for easy mixing.
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
For the apple topping
  • 2 cups apples, peeled and sliced Use firm apples for best results.
  • 1 teaspoon ground cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, toss the sliced apples with ground cinnamon until coated. Set aside.
  3. Combine flour, brown sugar, oats, and melted butter in another bowl. Mix until crumbly.
  4. Press half of the crumb mixture into the bottom of a greased springform pan.
  5. In a separate bowl, beat cream cheese, granulated sugar, and vanilla until smooth.
  6. Add eggs one at a time, mixing well after each addition.
Assembly
  1. Pour the cheesecake filling over the crust in the springform pan.
  2. Sprinkle the remaining crumb mixture on top.
Baking
  1. Bake in the preheated oven for 50-60 minutes, or until set and golden.
  2. Allow to cool before serving.

Notes

Serve with vanilla ice cream or whipped cream. Drizzle with caramel for extra richness. Store in the fridge for up to 4 days or freeze for longer storage.
