Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, toss the sliced apples with ground cinnamon until coated. Set aside.
- Combine flour, brown sugar, oats, and melted butter in another bowl. Mix until crumbly.
- Press half of the crumb mixture into the bottom of a greased springform pan.
- In a separate bowl, beat cream cheese, granulated sugar, and vanilla until smooth.
- Add eggs one at a time, mixing well after each addition.
Assembly
- Pour the cheesecake filling over the crust in the springform pan.
- Sprinkle the remaining crumb mixture on top.
Baking
- Bake in the preheated oven for 50-60 minutes, or until set and golden.
- Allow to cool before serving.
Notes
Serve with vanilla ice cream or whipped cream. Drizzle with caramel for extra richness. Store in the fridge for up to 4 days or freeze for longer storage.
