Method
 

Preparation
  1. In a mixing bowl, whisk together the flour, sugar, and salt. Make a well in the center and crack the eggs into it.
  2. Gradually add the milk, whisking until the mixture is smooth and free of lumps. Stir in the melted butter.
Resting the Batter
  1. Let the batter sit for at least 15 to 30 minutes at room temperature to fully hydrate the flour.
Cooking the Crepes
  1. Preheat a non-stick skillet over medium heat and lightly grease it with unsalted butter or oil.
  2. Pour about 1/4 cup of batter into the center of the hot skillet. Quickly tilt and swirl the pan to spread the batter into a thin layer.
  3. Cook for about 1 to 2 minutes, or until the edges start to lift and the bottom is lightly golden.
  4. Use a spatula to gently slide under the crepe, and flip it over. Cook for another minute on the other side until lightly browned.
  5. Transfer the cooked crepe to a plate and cover it with a kitchen towel to keep warm. Repeat the process with the remaining batter, greasing the pan as needed.
Serving
  1. Fill with your favorite sweet or savory fillings, such as Nutella, fruits, cheese, or ham.

Notes

Make sure your skillet is hot enough for even cooking. Strain the batter through a fine-mesh sieve for smoother texture. Experiment with different fillings.
