Preparation
- In a mixing bowl, whisk together the flour, sugar, and salt. Make a well in the center and crack the eggs into it.
- Gradually add the milk, whisking until the mixture is smooth and free of lumps. Stir in the melted butter.
Resting the Batter
- Let the batter sit for at least 15 to 30 minutes at room temperature to fully hydrate the flour.
Cooking the Crepes
- Preheat a non-stick skillet over medium heat and lightly grease it with unsalted butter or oil.
- Pour about 1/4 cup of batter into the center of the hot skillet. Quickly tilt and swirl the pan to spread the batter into a thin layer.
- Cook for about 1 to 2 minutes, or until the edges start to lift and the bottom is lightly golden.
- Use a spatula to gently slide under the crepe, and flip it over. Cook for another minute on the other side until lightly browned.
- Transfer the cooked crepe to a plate and cover it with a kitchen towel to keep warm. Repeat the process with the remaining batter, greasing the pan as needed.
Serving
- Fill with your favorite sweet or savory fillings, such as Nutella, fruits, cheese, or ham.
Notes
Make sure your skillet is hot enough for even cooking. Strain the batter through a fine-mesh sieve for smoother texture. Experiment with different fillings.
