  • ¼ cup granulated sugar Sweetens the meringue and helps achieve stability.
  • 1 pinch salt Enhances the flavor.
  • food coloring (optional) For a fun and colorful touch to your macarons.
  • Filling of your choice (buttercream, ganache, or jam) To complement the flavor.

Method
 

Preparation
  1. Measure and sift the powdered sugar and almond flour together.
  2. Whip the egg whites in a clean, dry bowl until foamy.
  3. Gradually add in the granulated sugar while continuing to whip until stiff peaks form.
  4. If using, add a few drops of food coloring and gently fold in.
  5. Add the dry ingredients to the meringue in three additions, folding until the mixture flows like lava.
  6. Pipe the macarons onto lined baking sheets using a round tip.
  7. Let them sit at room temperature for 20-30 minutes to allow a skin to form.
Baking
  1. Preheat your oven to 300°F (150°C).
  2. Bake the macarons for 15-20 minutes until they have a hard shell.
  3. Allow them to cool completely before gently peeling them off the baking sheets.

Notes

Age your egg whites for better meringue, keep humidity low, and allow macarons to dry properly for best results.
