- In a large bowl, coat the chicken pieces with curry powder, allspice, paprika, salt, and pepper. Allow it to marinate for at least 30 minutes.
Cooking
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and minced garlic, sautéing until the onions turn translucent and fragrant, about 3-4 minutes.
- Add the marinated chicken to the pot, making sure to brown each piece on all sides.
- Stir in the chopped hot peppers, coconut milk, and chicken stock. The mixture should come to a simmer.
- Cover the pot and cook on low heat for about 30-40 minutes, until the chicken is fully cooked and tender.
- Taste and adjust the seasoning if necessary. Serve the curry hot, garnished with fresh cilantro.
Notes
To serve, consider pairing it with fluffy white rice or warm roti. Store leftovers in an airtight container in the fridge for up to three days or freeze for up to three months. Reheat gently on the stovetop, adding a splash of water or stock if needed.
