A baked potato is comfort food at its simplest with a crisp skin and fluffy interior, perfect as a side or main dish, easily customizable with toppings.

Ingredients
  

Main Ingredients
  • 4 medium baking potatoes (Russet or Yukon) Choose firm potatoes with dry, intact skin.
  • 1–2 tablespoons olive oil Use fresh extra-virgin olive oil for flavor.
  • to taste Coarse salt (kosher or sea salt)
Optional Toppings
  • Butter Add while the potato is still hot.
  • Sour cream
  • Shredded cheese
  • Chives or green onions

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Wash the potatoes thoroughly and pat dry.
  3. Prick the potatoes with a fork several times.
  4. Rub the skins with olive oil and sprinkle with coarse salt.
Baking
  1. Place the potatoes directly on the oven rack and bake for about 45–60 minutes, or until the skins are crispy and the insides are soft.
  2. Remove from the oven and let cool for a few minutes.
  3. Cut a slit in the top of each potato and fluff the insides with a fork.
  4. Add your favorite toppings and serve.

Notes

For the best results, avoid wrapping in foil and allow adequate space between potatoes when baking. For extra crispy skin, finish under the broiler for 1–2 minutes.
