Preparation
- Line two baking sheets with parchment paper or silicone mats to prevent sticking.
- In a bowl, sift together the almond flour and confectioners' sugar until fine.
- In a clean, dry bowl, whip the egg whites on medium speed until foamy.
- Gradually add granulated sugar and continue whisking until stiff peaks form.
- If desired, add food coloring during the last few minutes of whipping.
- Gently fold the dry ingredients into the meringue using a spatula.
- Transfer the batter to a piping bag and pipe small circles onto your prepared sheets.
- Let the piped macarons rest for at least 30 minutes.
- Preheat the oven to 300°F (150°C) and bake the macarons for 12-15 minutes.
Notes
For best results, use aged egg whites and check your oven temperature. Store macarons in an airtight container in the refrigerator for up to seven days.
