  • 3 cups cooked chicken, shredded or cubed You can use rotisserie chicken to save time.
  • 3 cups cooked pasta (penne or rotini) Cook pasta al dente so it won’t get mushy when baked.
  • 1 cup BBQ sauce
  • 1 cup ranch dressing For lighter version, use low-fat ranch.
  • 1 cup shredded cheese (cheddar or mozzarella) A mix of cheddar and mozzarella is great for melting.
  • 1/2 cup chopped green onions
  • Salt and pepper to taste Taste and adjust after mixing sauces.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together cooked chicken, cooked pasta, BBQ sauce, ranch dressing, and half of the cheese until well combined.
  3. Pour the mixture into a greased casserole dish.
  4. Sprinkle the remaining cheese and chopped green onions on top.
Baking
  1. Bake for about 25-30 minutes, or until the cheese is bubbly and golden.
  2. Let it cool for a few minutes before serving.

Notes

Serve hot straight from the oven. It pairs well with a green salad or steamed vegetables. Cool the casserole to room temperature before storing. For longer storage, freeze in a freezer-safe container.
