  • 3 pieces carrots, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • to taste salt and pepper
  • 2 tbsp olive oil

Method
 

Preparation
  1. In a large pot, heat the olive oil over medium heat until shimmering.
  2. Add the beef cubes to the pot, ensuring they are well spaced to brown evenly.
  3. Stir in the chopped onions and minced garlic. Cook until the onions turn translucent, about 5 minutes.
  4. Mix in the tomato paste, dried thyme, salt, and pepper, allowing the flavors to meld for about a minute.
  5. Pour in the beef broth, bring it to a boil.
  6. Lower the heat and add in the diced potatoes and sliced carrots.
  7. Cover and let it simmer for 6-8 hours until the beef falls apart easily.
  8. Before serving, taste the stew and adjust the seasoning if needed.

Notes

This beef stew pairs well with crusty bread and a fresh green salad. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for 3 months. Reheat slowly on the stove.
