  • 1 cup Blueberries, fresh Use fresh blueberries for the best flavor.
  • 2 cloves Garlic, minced
  • 2 tbsp Thyme, fresh
  • 1 tbsp Balsamic vinegar
  • 1 tbsp Honey Feel free to adjust the amount based on your sweetness preference.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the blueberries, minced garlic, thyme, balsamic vinegar, honey, salt, and pepper.
Cooking
  1. Heat olive oil in a skillet over medium heat.
  2. Sear the chicken breasts on both sides until browned.
  3. Transfer the chicken to a baking dish and pour the blueberry mixture on top.
  4. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through.
  5. Let it rest for a few minutes before serving.

Notes

Serve the chicken warm, drizzled with the blueberry sauce. It pairs well with rice, quinoa, or a fresh salad. You can also add some steamed vegetables. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
