  • 1 pound breakfast sausage Mild, hot, or sage; mild is recommended.
  • 2 cups Bisquick baking mix Provides structure.
  • 2 cups shredded cheddar cheese Sharp cheddar is recommended for best flavor.
  • 1/4 cup milk Optional, for adjusting texture.
Optional Add-Ins
  • 1/2 teaspoon garlic powder For added flavor.
  • 1/4 teaspoon black pepper
  • a pinch cayenne For heat.
  • 2 tablespoons chopped green onion For a fresher bite.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, add the breakfast sausage, Bisquick, and shredded cheddar cheese.
  3. Mix together with a spoon, then use your hands to combine until evenly mixed.
  4. If the mixture is too dry, gradually add milk, one tablespoon at a time until it can hold together.
Cooking
  1. Roll the mixture into 1-inch balls and place them on the baking sheet with space in between.
  2. Bake for 18 to 22 minutes, or until lightly browned and cooked through.
Serving
  1. Allow the sausage balls to cool for 5 minutes before serving.

Notes

For best results, use room temperature sausage. Do not overbake to avoid dryness. These can be made ahead of time and stored in the fridge or frozen for later.
