Ingredients
  

Dry Ingredients
  • 1 cup All purpose flour
  • 1 teaspoon Baking powder
  • 2 tablespoons Cornstarch
  • 1/2 cup Light Brown sugar
  • 3/4 cup Granulated sugar
  • 1/4 teaspoon Salt
Wet Ingredients
  • 1 cup Unsalted Butter Softened
  • 1 teaspoon Vanilla extract
  • 1 large Egg
  • 1 large Egg yolk
  • 1 tablespoon Lemon juice
  • 2 tablespoons Ice water
Filling
  • 2 cups Fresh Blackberries Use fresh, firm blackberries
  • 1 cup Pistachios Chopped coarsely

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. In a mixing bowl, combine the all-purpose flour, baking powder, cornstarch, light brown sugar, granulated sugar, and salt.
  3. In a separate bowl, cream the butter and vanilla extract until smooth.
  4. Add the egg, egg yolk, and lemon juice to the butter mixture and mix well.
  5. Gradually incorporate the dry ingredients into the wet ingredients until combined.
  6. Gently fold in the fresh blackberries and chopped pistachios.
  7. Pour the batter into the prepared baking pan and spread evenly.
Baking
  1. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow to cool completely before cutting into bars.

Notes

Cut the bars into squares and serve at room temperature. Add a light dusting of powdered sugar if desired. Serve with vanilla ice cream or plain yogurt for a simple treat. Store in an airtight container at room temperature for up to 2 days or refrigerated for up to 5 days.
