Preparation
- Preheat your oven to 350°F (175°C) and grease a baking pan.
- In a mixing bowl, combine the all-purpose flour, baking powder, cornstarch, light brown sugar, granulated sugar, and salt.
- In a separate bowl, cream the butter and vanilla extract until smooth.
- Add the egg, egg yolk, and lemon juice to the butter mixture and mix well.
- Gradually incorporate the dry ingredients into the wet ingredients until combined.
- Gently fold in the fresh blackberries and chopped pistachios.
- Pour the batter into the prepared baking pan and spread evenly.
Baking
- Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool completely before cutting into bars.
Notes
Cut the bars into squares and serve at room temperature. Add a light dusting of powdered sugar if desired. Serve with vanilla ice cream or plain yogurt for a simple treat. Store in an airtight container at room temperature for up to 2 days or refrigerated for up to 5 days.
