Ingredients
  

Main Ingredients
  • 1 medium green cabbage Choose a dense, heavy cabbage with tight leaves.
  • 1 medium onion Pick firm and dry onions.
  • 2 cloves garlic Must be plump, not soft.
  • 1 inch piece fresh ginger Smooth and not shriveled for bright flavor.
  • 1 optional green chili Add for heat, adjust based on preference.
  • 1 medium avocado, sliced Use ripe avocado, slightly soft to touch.
  • 1 small bunch fresh cilantro or parsley Choose bright green leaves.
Spices and Seasoning
  • 1 tbsp lemon juice Adds brightness to the dish.
  • 1 tsp black pepper
  • 1 tsp garam masala
  • 1 tsp salt
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
Other Ingredients
  • 1 tbsp olive oil Can substitute with any neutral oil.
  • 1 tbsp toasted sesame seeds For garnishing.
  • 1 dollop vegan yogurt For serving; can substitute with dairy yogurt.
  • 1 your choice nuts, chopped For a creamy finish; use almonds or cashews.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Chop the cabbage into wedges or thick slices.
  3. Slice the onion thinly.
  4. Mince garlic and grate ginger.
  5. In a large bowl, mix together the chopped cabbage, sliced onion, minced garlic, grated ginger, and optional green chili.
  6. Add the olive oil, lemon juice, black pepper, garam masala, salt, turmeric, and cumin, and toss well to combine.
Baking
  1. Transfer the mixture to a baking dish and spread it out evenly.
  2. Cover with foil and bake for 20 minutes.
  3. Remove the foil and continue baking for an additional 10-15 minutes or until the cabbage is tender.
Serving
  1. Serve warm, topped with avocado slices, fresh cilantro or parsley, and a dollop of vegan yogurt.
  2. Sprinkle with toasted sesame seeds and nuts before serving.

Notes

For a crunchy texture or variation, try adding roasted sweet potato or cauliflower. If preferred, leave uncovered for the last 10-15 minutes to achieve more browning.
