Preparation
- In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until fragrant.
- Stir in the ground chicken and cook until browned.
- Add chicken broth, tomato paste, tomato sauce, Worcestershire sauce, Cajun seasoning, brown sugar, paprika, and season with salt and pepper. Let simmer for 10-15 minutes.
Make the Cheese Sauce
- In a separate saucepan, melt butter and whisk in flour to make a roux. Gradually add milk, stirring until thickened, then add shredded cheese until melted.
Assembly
- Toast the brioche buns.
- Assemble the sloppy joes by placing the chicken mixture on the bun and topping it with the creamy cheese sauce.
Notes
Use freshly shredded cheese for a smoother sauce. Taste and adjust salt and Cajun seasoning as you simmer. Cook the chicken well and break it into small pieces for easy eating. For a milder version, cut Cajun seasoning to 1 tbsp.
