Cajun Chicken Sloppy Joes with Creamy Cheese Sauce

Ingredients
  

Chicken Mixture
  • 1 lb Ground chicken
  • 2 cloves Garlic minced
  • 1 small Onion chopped
  • 1/2 cup low-sodium Chicken broth
  • 1 tbsp Tomato paste
  • 1/2 cup canned Tomato sauce
  • 1 tbsp Worcestershire sauce
  • 2 tbsp All-purpose flour
  • Freshly ground Black pepper to taste
  • 1 tsp Brown sugar
  • 2 tbsp Cajun seasoning
  • 1/4 tsp Paprika
  • Salt to taste
  • 1 tbsp Olive oil
Buns and Cheese Sauce
  • 4 Brioche hamburger buns toasted
  • 2 tbsp unsalted Butter
  • 1 cup Whole milk
  • 8 oz Sharp cheddar or American cheese freshly shredded

Method
 

Preparation
  1. In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until fragrant.
  2. Stir in the ground chicken and cook until browned.
  3. Add chicken broth, tomato paste, tomato sauce, Worcestershire sauce, Cajun seasoning, brown sugar, paprika, and season with salt and pepper. Let simmer for 10-15 minutes.
Make the Cheese Sauce
  1. In a separate saucepan, melt butter and whisk in flour to make a roux. Gradually add milk, stirring until thickened, then add shredded cheese until melted.
Assembly
  1. Toast the brioche buns.
  2. Assemble the sloppy joes by placing the chicken mixture on the bun and topping it with the creamy cheese sauce.

Notes

Use freshly shredded cheese for a smoother sauce. Taste and adjust salt and Cajun seasoning as you simmer. Cook the chicken well and break it into small pieces for easy eating. For a milder version, cut Cajun seasoning to 1 tbsp.
