  • 2 pieces Chicken breasts
  • 3 cloves Garlic
  • 1 small Onion Diced
  • 1 bunch Parsley For garnish
  • 1 piece Red bell pepper Diced
  • 1 cup Chicken broth
  • 12 oz Penne or rotini pasta
  • 1 tbsp Cajun seasoning
  • 1 tsp Paprika
  • Salt and pepper (to taste)
  • 2 tbsp Olive oil
  • 1 cup Cheddar cheese Shredded, for topping
  • 8 oz Cream cheese
  • 1 cup Heavy cream
  • 1/2 cup Parmesan cheese, grated For topping

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Cook the pasta according to package instructions, then drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add diced onion, garlic, and red bell pepper, and sauté until softened.
  4. Add the chicken breasts and cook until browned on both sides.
  5. Stir in chicken broth, Cajun seasoning, paprika, salt, and pepper.
  6. Mix in cream cheese and heavy cream, allowing it to melt and create a sauce.
  7. Combine the cooked pasta with the sauce and chicken mixture.
Baking
  1. Transfer to a baking dish and top with cheddar and parmesan cheese.
  2. Bake for 20-25 minutes or until the cheese is bubbly and golden.
Serving
  1. Garnish with fresh parsley before serving.

Notes

Serve hot with a side salad or garlic bread. Store leftovers in the refrigerator for up to 3 days, or freeze for up to 2 months. Reheat by baking at 350°F (175°C). Adjust spice levels as needed.
