Vegetables
  • 1.5-2 pounds Brussels sprouts Choose firm, small to medium sprouts.
Main Ingredients
  • 6-8 slices Bacon, chopped Use a cut you prefer; thick-cut adds more chew.
  • 2-3 tablespoons Olive oil Choose a mild flavor olive oil.
  • 1 teaspoon Salt Adjust to taste.
  • to taste Black pepper, freshly ground Adjust to taste.
  • 1-2 tablespoons Maple syrup Optional for added sweetness.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Trim the ends of the Brussels sprouts and cut them in half.
  3. In a large bowl, toss the Brussels sprouts with olive oil, salt, and pepper.
Roasting
  1. Spread the Brussels sprouts out on a rimmed baking sheet and add chopped bacon on top.
  2. Roast in the oven for 20–25 minutes, stirring halfway through, until the Brussels sprouts are crispy and browned.
  3. If desired, drizzle with maple syrup before serving for added sweetness.

Notes

Make sure not to crowd the pan to ensure even browning. Bacon can be replaced with smoked tempeh for a vegetarian option.
