Ingredients
  

Meat and Vegetables
  • 1.5 lbs Ground beef, Lean Use lean ground beef for a healthier option.
  • 1 tsp Garlic powder
  • 4 oz Green chiles Mild green chiles work well.
  • 1 Red bell pepper, chopped
  • 1 Yellow onion, chopped
  • 1 oz Taco seasoning mix
Sauce and Topping
  • 0.5 cup Mayonnaise
  • 0.5 cup Salsa, mild
  • 2.5 cups Biscuit mix
  • 1 cup Water
  • 1.5 cups Cheddar cheese, shredded Pre-shredded cheese can save time.
  • 0.5 cup Sour cream
Miscellaneous
  • Cooking spray For greasing the baking dish.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  3. Add garlic powder, green chiles, bell pepper, onion, and taco seasoning to the skillet; cook until the vegetables are tender.
  4. In a separate bowl, mix mayonnaise and salsa.
  5. In another bowl, combine biscuit mix with water to form a dough.
Assembly and Baking
  1. Spray a baking dish with cooking spray. Layer the beef mixture in the bottom, followed by the mayonnaise salsa mixture, and top with the biscuit dough.
  2. Bake for 25-30 minutes or until the biscuit topping is golden brown.
  3. Remove from the oven, top with cheddar cheese and sour cream, and serve warm.

Notes

Serve warm with a bit of sour cream on each portion. Add extra salsa or chopped fresh cilantro if desired. A green salad or steamed veggies pair well.
