- Preheat grill to medium-high. Grill chicken skewers for 10–12 minutes, turning occasionally until golden brown.
- In a saucepan, melt butter and whisk in flour to create a roux. Gradually add milk and stir until smooth, then stir in cheddar cheese and paprika, cooking until melted and creamy.
- Cook fries according to package instructions or prepare homemade fries until crispy.
Assembly
- In a large bowl, combine lettuce, cucumber, tomatoes, red onion, and feta. Drizzle with olive oil, lemon juice, salt, and pepper.
- Serve arranged on plates with fries, salad, and skewers; drizzle with cheese sauce and garnish with parsley.
