Ingredients
  

For the Chicken Skewers
  • 2 lbs chicken breast, cut into cubes Look for plump breasts without discoloration.
  • 2 tbsp olive oil For marinating.
  • 1 tsp garlic powder
  • 1 tsp paprika Use extra for the cheese sauce as well.
  • 1 tsp onion powder
  • 1 tsp salt To taste for marination and salad.
  • 1/2 tsp black pepper
  • 6 pieces wooden skewers Soak in water beforehand to prevent burning.
For the Cheese Sauce
  • 2 tbsp butter For base of the sauce.
  • 2 tbsp all-purpose flour Can substitute with gluten-free flour.
  • 1 cup milk Use dairy-free alternative if desired.
  • 1 1/2 cups shredded cheddar cheese Swap for a vegan cheese for dairy-free.
  • 1/4 tsp paprika
For the Fries and Salad
  • 1 lb frozen French fries or 4 large potatoes for homemade fries
  • 4 cups shredded iceberg lettuce
  • 1 cup cucumber slices
  • 2 pieces tomatoes, sliced
  • 1/2 cup red onion, diced
  • 1/2 cup feta cheese, cubed Optional for additional flavor.
  • 2 tbsp olive oil For salad dressing.
  • 1 tbsp lemon juice Freshly squeezed is best.

Method
 

Preparation
  1. Toss chicken cubes with olive oil, garlic powder, paprika, onion powder, salt, and black pepper. Let it marinate for at least 15 minutes.
  2. Thread chicken onto skewers evenly, leaving space between pieces to ensure even cooking.
Cooking
  1. Preheat grill to medium-high. Grill chicken skewers for 10–12 minutes, turning occasionally until golden brown.
  2. In a saucepan, melt butter and whisk in flour to create a roux. Gradually add milk and stir until smooth, then stir in cheddar cheese and paprika, cooking until melted and creamy.
  3. Cook fries according to package instructions or prepare homemade fries until crispy.
Assembly
  1. In a large bowl, combine lettuce, cucumber, tomatoes, red onion, and feta. Drizzle with olive oil, lemon juice, salt, and pepper.
  2. Serve arranged on plates with fries, salad, and skewers; drizzle with cheese sauce and garnish with parsley.

Notes

Store in an airtight container in the fridge for up to 3 days. You can marinate the chicken the night before for better flavor.
