Ingredients
  

For the Filling
  • 2 cups Chicken breast, cooked Use warm for best melting.
  • 1 handful Baby spinach Pat dry to avoid sogginess.
  • 2 cloves Garlic, minced Cook until fragrant.
  • 1 tbsp Parsley, fresh, chopped
  • to taste Salt and pepper Season to preference.
  • 1 tbsp Olive oil For sautéing garlic.
  • 1/2 cup Cheddar cheese, shredded Can swap with pepper jack for heat.
  • 1/4 cup Cream cheese, softened Spread well to bind the filling.
  • 1 cup Mozzarella cheese, shredded
For the Wraps
  • 4 large Low-carb tortillas or wraps Can substitute with flour or whole wheat.

Method
 

Preparation
  1. Heat olive oil in a skillet over medium heat. Add minced garlic and cook until fragrant.
  2. In a bowl, mix together cooked chicken, baby spinach, parsley, salt, pepper, cheddar cheese, and cream cheese until well combined.
  3. Lay out the tortillas on a flat surface and evenly distribute the chicken mixture among them.
  4. Sprinkle mozzarella cheese on top of the chicken mixture.
  5. Roll each tortilla tightly to form a wrap.
Cooking
  1. Optional: Grill the wraps in the skillet for 2-3 minutes on each side until golden and crispy.
  2. Slice in half and serve warm.

Notes

Serve with a small salad or fresh veggies. A simple dip like sour cream or plain yogurt works well. Store wraps in an airtight container in the fridge for up to 3 days. Reheat in a skillet or in the oven at 350°F (175°C).
