  • 1/2 cup grated Parmesan cheese Opt for real Parmigiano-Reggiano or good quality grated Parmesan.
  • 1/4 cup breadcrumbs Plain or panko breadcrumbs can be used; panko gives a lighter texture.
  • 2 cloves garlic, minced Use fresh garlic for a bright, sharp aroma.
  • 1 piece egg Use a fresh egg at room temperature.
  • 1 teaspoon dried Italian herbs
  • to taste salt and pepper
  • 1 cup shredded mozzarella cheese Use low-moisture shredded mozzarella for better melting.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine ground chicken, grated Parmesan, breadcrumbs, minced garlic, egg, dried Italian herbs, salt, and pepper.
  3. Mix until well combined, being careful not to overwork the meat.
  4. Form the mixture into a loaf shape on a greased baking dish.
  5. Top with shredded mozzarella cheese, spreading it evenly.
Baking
  1. Bake for 40–45 minutes until the internal temperature reaches 165°F (74°C).
  2. Let the loaf rest for 5 minutes before slicing and serving.

Notes
