Preparation
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine ground chicken, grated Parmesan, breadcrumbs, minced garlic, egg, dried Italian herbs, salt, and pepper.
- Mix until well combined, being careful not to overwork the meat.
- Form the mixture into a loaf shape on a greased baking dish.
- Top with shredded mozzarella cheese, spreading it evenly.
Baking
- Bake for 40–45 minutes until the internal temperature reaches 165°F (74°C).
- Let the loaf rest for 5 minutes before slicing and serving.
Notes
Great for weeknights and potlucks. Store leftovers in the fridge for up to 3-4 days or freeze for up to 3 months.
