  • 2 cups halved cherry tomatoes Pick ripe, firm tomatoes that are sweet and glossy.
  • 1.5 cups cheese (your choice) Use a cheese that melts well, like mozzarella, fontina, or cheddar.
  • 2 tablespoons olive oil Helps the bread brown and the tomatoes roast.
  • 1 teaspoon garlic herb seasoning Season to taste.
  • 1 teaspoon salt Adjust if using salty cheese.
  • 1 teaspoon pepper

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) for at least 10 minutes.
  2. In a medium baking dish, combine the cubed bread, halved cherry tomatoes, and cheese.
  3. Drizzle with olive oil, and sprinkle garlic herb seasoning, salt, and pepper over the top.
  4. Toss gently to combine until bread pieces get a light coat of oil and seasoning.
Baking
  1. Bake in the preheated oven for 20-25 minutes or until the cheese is bubbly and golden.
  2. Remove from oven and let rest for 3-5 minutes before serving.
Serving
  1. Spoon out the concentrated juices from the bake to drizzle over servings.
  2. Serve warm, garnished with fresh basil or parsley.

Notes

This dish is flexible; you can change cheese types, herbs, or use gluten-free bread. A quick sauce can be made from the roasted juices to keep the bread moist.
